Campsite cooking is the best form of meal-making according to Ali Ray, the Club’s Eat Local ambassador.
Not only because of all the usual kitchen rules no longer apply but campsite cooking allows you to be creative and have fun. Start by adding a few spices to your favourite meals – go easy at first and add a little at a time until you get the taste you desire is Ali’s advice.
With Valentines Day on the horizon maybe it’s time you spiced up your campsite cooking? With that in mind we’ve selected three dishes created by Ali Ray perfect for that special day with a little added spice.
You'll find these and more great recipes and videos – not just for special ocassions – from Ali Ray online.
1. Lamb balti-style curry
Cooking time: 20mins
This curry is so full of flavour – and gets even better if you reheat for the next day too
Don't be put off by the list of ingredients, many of them are just dry spices that you could combine in a little jar at home before you head off camping. You could also buy those handy puree tubes of garlic, ginger and chilli instead of prepping it fresh to make it quicker too.
2. Campers chicken tagine with lemon couscous
Cooking time: 30mins
A tagine is one of my favourite one-pot dishes. The cumin and coriander fuse wonderfully with the sweet honey to make an aromatic and tasty dish.
This is such an easy dish to make. Don't let the length of ingredients list put you off – the spices and herbs are all things you can put together in a bag before leaving home. Replace the chicken with aubergine for a vegetarian alternative
3. Tomato, cauliflower, chickpea and spinach curry
Cooking time: 25mins
A nutritious and easy one-pot supper. The fresh, ripe tomatoes give it a depth of flavour as well as provide the juice for the sauce that can be mopped up with naan bread or rice.
