As the seasons nudge us into autumn, shorter days and long, dark nights call for one thing - comfort food.

1. Pork chops with roasted red pepper and beans
If you want a delicious, nourishing yet great value meal, this is it.

Using lots of store cupboard ingredients this recipe can be made in one large frying pan if you make the beans and peppers first, put them to one side and then fry the pork chop, or if the barbecue is to hand – pop your chops on the grill for a lovely caramelised grilled flavour.
2. Superbly Simple Mushroom Risotto
A deliciously filling and comforting dish, this seasonal mushroom risotto is perfect for cooler autumn days.

Look out in farm shops and markets for a variety of cultivated mushrooms such as oysters, ceps and chanterelles to add interesting flavours and textures to the dish. Ordinary mushrooms will do too, although try and get the ones with the dark gills which add flavour as well as texture. Dry porcini mushrooms are also great – just rehydrate them in a mug of boiling water for 10 minutes first.
3. Chicken and lentil soup
This leftover chicken, lentil and vegetable soup is nutritious, low-fat, filling, and delicious. A steaming bowl of this after a walk will warm you up and soothe your soul.

As this recipe uses leftover chicken, it is worth planning your camping meals in advance. My suggestion is to have a dinner of grilled chicken one night, and cook a couple of extra chicken breasts at the same time, put them to one side to use in this recipe the following day.
4. Hot Cross Bun Bread and butter pudding
A real sustenance pud for cold camping days.

Hot cross buns are a delicious alternative to sliced bread.
5. Cheats Sticky Toffee Pudding
This is a really quick and easy way to make a cheats sticky toffee pudding.

The secret to this recipe is the really amazing gooey chocolate muffins.
