Griddled baby gem lettuce with stilton and walnuts
The idea of grilling lettuce is unusual to many people, but it works wonderfully, and you will get to experience a new flavour to an ingredient that is usually tacked on to a meal as an afterthought.
Meat
Romaine lettuce also works well on the griddle - essentially you need to use lettuce with a tightly packed structure. I’ve used cider here, but a little beer will also work well.
