Oozy blue cheese pasta with mushrooms & courgettes

I used Dorset blue vinny cheese for this dish as it has a sweet and gentle flavour for a blue cheese – lots of taste and less 'tang' than something stronger like stilton.

Experiment with the cheeses you find on your travels. The heat of the pasta melts the cheese just enough to make it almost 'self-saucing'. Mushrooms and blue cheese are a classic taste combination, but I've added the courgettes and a squeeze of lemon to add a summer freshness to the dish. Ali Ray
