Hot new potato salad

This recipe is inspired by an early season Cornish camping trip using simple local ingredients such as eggs, bacon and a few store cupboard extras. It makes a delicious lunch.

Cornish Earlies are delightful, diminutive sweet-tasting new potatoes, grown in soil fertilised with seaweed from the local Cornish beaches. A Cornish Early is a treasure of a tuber that really tastes of its place and marks the beginning of the warmer weather bringing hopes of crops to come later in the year. Ali Ray
