Campers chicken tagine with lemon couscous
A tagine is one of my favourite one-pot dishes. The cumin and coriander fuse wonderfully with the sweet honey to make an aromatic and tasty dish. It isn't spicy so the children will enjoy it too.

This is such an easy dish to make. Don't let the length of ingredients list put you off – the spices and herbs are all things you can put together in a bag before leaving home. Replace the chicken with aubergine for a vegetarian alternative
