The mere fact it’s St David’s Day this month is enough of an excuse for me to extol the virtues of Welsh cuisine in all its nourishing heartiness. While the modern Welsh food scene is thriving (just head to Abergavenny Food Festival for proof) the traditional Welsh dishes, lacking in pretension yet brimming in deep taste and flavour, are really hard to beat.
