Spending a weekend away at Bellingham Club Site in the Adria Matrix, I was keen to try cooking and test out its kitchen facilities. Planning something easy to throw together after we arrived late on site on Friday night, I’d gone for vegetarian fajitas, with fairly minimal ingredients – by which I mean I’d forgotten to pack an onion.
