1. Smoked trout, watercress and apple salad
Serves 4
The hot peppery tang of the watercress, the delicate smokiness of the trout and the crisp-sharp bite of the apple combine to make a simple salad that is exploding with flavour.
You can add extra vegetables to this, according to what you can get your hands on. Quartered beetroot and thinly-sliced fennel would be fantastic additions, or even just grated carrot. You can leave the potatoes out if you fancy a lighter meal.

2. Warm salad of courgette, goats cheese and bacon
Serves 4
With June comes sun and courgettes. Good news for campers all round then. With a bit of imagination at the barbecue I've created this delicious warm courgette salad.

3. Griddled mustard lamb with noodle salad
Serves 2
My husband thinks a salad isn't a proper meal in itself as it is not filling enough. So here I prove him wrong with my lamb salad for salad naysayers.
This salad has perfectly grilled slices of leg steak that's been marinated in a mustard dressing, while the salad is made using filling noodles with a dressing, mixed with radishes, cucumber and onions and griddled baby gem lettuce.

4. Hot steak salad with green beans and courgettes
Serves 2
This is an impressive summer dish both in looks and taste. It also makes a good steak go a little further.
The intense summer flavours of chilli, mint and lime really sing out from the deep savoury taste of the meat.

5. Hot new potato salad
Serves 4
This recipe is inspired by an early season Cornish camping trip using simple local ingredients such as eggs, bacon and a few store cupboard extras. It makes a delicious lunch.
Cornish Earlies are delightful, diminutive sweet-tasting new potatoes, grown in soil fertilised with seaweed from the local Cornish beaches. A Cornish Early is a treasure of a tuber that really tastes of its place and marks the beginning of the warmer weather bringing hopes of crops to come later in the year.
