My husband Gav has a constantly changing fantasy football team in his head. My equivalent is my desert island cheeseboard. I tweak it most weeks as I feel it's important to get it right. Just in case. Other fromage fantasists will totally understand my dilemmas, such as how many blue cheeses versus goats' cheeses, what ratio of hard to soft, crumbly to spreadable? It's a constant concern.
