Camping food for a spooktacular night: Halloween Pumpkin Pizza


Andrew Dickens with his Halloween pizzaWith Halloween just around the corner, it’s the perfect excuse to cook up a ghoulishly good feast for your little monsters whether at home or at camp. 

At the recent Motorhome and Caravan Show at Birmingham’s NEC,  Andrew Dickens, representing the Club’s Eat local campaign, prepared and cooked some devishly good camping recipes on the Club’s stand including this scarily tasty Halloween Pumpkin, Rocket and Maple Syrup Pizza

 

 

 

 

Halloween Pumpkin, Rocket and Maple Syrup Pizza

Serves 2-4

  • Ingredients
  • Thawed, frozen pizza dough
  • 6 tablespoons of passata
  • 1 tablespoon of dried oregano
  • ½ tablespoon of unrefined golden caster sugar
  • 1-2 teaspoons of garlic puree
  • 1 fresh mozzarella (drained and patted dry)
  • Small pumpkin or any winter squash
  • Maple syrup
  • Fresh rocket
  • Rapeseed oil
  • Salt and pepper
  • Wholemeal flour / semolina flour to dust pizza stone
     

Get prepped

  1. Roll pizza dough out thinly on a floured surface.
  2. Mix the passata, oregano, unrefined golden caster sugar and garlic.
  3. Spread thinly on the pizza base leaving a ½ inch gap around the edge.
  4. Cut a thin wedge of pumpkin and with a potato peeler, peel them into thin strips.
  5. Pour a tablespoon of maple syrup onto the pumpkin and coat evenly.
  6. Place the pumpkin on the passata mix and then tear small chunks of the mozzarella off, placing them in between the pumpkin strips.

Get cooking

  1. Get your pizza stone nice and hot and then cook until the base is crisp and the toppings are cooked – making sure you keep the lid on at all times.
